Dietary nitrate raises nitric oxide availability, and nitric oxide helps direct blood flow to active areas of the brain. In a randomized, double-blind, placebo-controlled study, a single nitrate-rich beetroot drink changed cerebral blood flow during cognitive tasks and improved performance on a working-memory measure. This acute response gives researchers a clear and promising connection between dietary nitrate, cerebral perfusion, and brain function.
The Mechanism: Neurovascular Coupling
Your brain depends on blood flow adjusting from moment to moment to match the activity of each region. This process is called neurovascular coupling. Nitric oxide is one of the primary signals involved. It relaxes smooth muscle in cerebral blood vessels, helping blood reach active brain tissue. Dietary nitrate is converted to nitrite and then nitric oxide, providing a nutritional route into this established vascular pathway.
What the Acute Trial Found
The 2015 study used a randomized, double-blind, placebo-controlled parallel-group design involving 40 healthy adults. Participants received either placebo or 450 mL of beetroot juice providing about 5.5 mmol of nitrate. After a 90-minute absorption period, researchers measured blood-flow responses in the frontal cortex with near-infrared spectroscopy while participants completed cognitive tasks.
The nitrate drink modulated the cerebral blood-flow response during task performance. Participants also improved on the serial 3s subtraction task, one of three cognitive tasks tested. This task draws on working memory. The result supports an acute effect on cerebral perfusion and one specific measure of cognitive performance. It does not establish that daily nitrate use improves memory or overall cognition over time.
A separate trial in older adults found that a single high-nitrate dose increased blood perfusion to the frontal lobe, a region that commonly experiences reduced blood flow with age. Together, these acute findings support continued research into nitrate, nitric oxide, and brain blood-flow responses.
Longer-Term Research Is Developing
Longer-term trials on daily use and everyday cognition are still developing, and results so far have been mixed. A 13-week randomized trial gave overweight and obese adults ages 60 to 75 one of three nitrate-rich beetroot juice regimens or a placebo. The study found no measurable improvement in cognitive function or cerebral blood flow at any tested dose.
The researchers proposed that prolonged nitrate intake might influence the body's own enzymatic nitric oxide production, but this remains a hypothesis rather than a confirmed explanation. Reviews of dietary nitrate and brain outcomes likewise describe an evolving evidence base. The established vascular mechanism and encouraging acute findings justify further investigation, while longer-term cognitive benefits have not yet been demonstrated consistently.
An Interesting Related Finding: Insulin and Brain Blood Flow
A randomized crossover trial in men with abdominal obesity found that a single dose of inorganic nitrate improved how certain brain regions responded to insulin, measured through cerebral blood flow, even though it did not directly change blood insulin or glucose levels. This early line of research points to another plausible connection between nitric oxide, brain perfusion, and metabolic signaling.
